Peanut Butter Easter Nest Cookie Cups

Even though Easter will look a little different this year, it is important for us to continue to keep as much normalcy as possible. So we are even doing a little Easter baking. This week I raided the pantry for something simple that my kids could make and everyone would love. The result is Peanut Butter Easter Nest Cookie Cups – it’s a mouthful, but they are delicious! And the best part is that you only need need 9 simple ingredients, which hopefully you already have on hand.

I’m gonna let you in on a secret, I don’t really like cake. Sometimes I will eat cake, but it’s not the first thing I reach for when I want something sweet. On the other hand, if there are cookies around — here comes the cookie monster! Which is why cookie cups are the best. A cookie base, but I can decorate them cute like a cupcake. We’ve made mocha latte cookie cups, Christmas cookie cups, Easter Bunny cookie cups and now peanut butter Easter nest cookie cups.

Peanut Butter Cookie Cups

For our peanut butter cup Easter nest cookies, we used my Four Ingredient Chocolate Chip Peanut Butter Cookies, but we left out the chocolate chips since we planned to top them with chocolate eggs.

After making the peanut butter cookie balls, place them in a mini muffin pan. Then use your thumb to press a small indentation in the middle of each cookie.

The peanut butter cookies don’t rise much, so a mini muffin pan is a perfect size.

You can substitute the peanut butter cookie for your favorite cookie recipe. We’ve even used break-and-bake cookies for bunny cookie cups in the past.

Butter Cream Frosting

This small batch of buttercream frosting makes more than enough to top 18 cookie cups.

Ingredients

  • 1/2 cup butter (softened)
  • 2 cups powdered sugar
  • 1/2 tablespoon vanilla
  • 2 tablespoons milk
  • a few drops of green food coloring

Directions

In a medium bowl mix the butter, vanilla and green food coloring. Add powdered sugar a half cup at a time and mix until combined. Add milk and mix until creamy.

To create the Easter nests, place frosting in a piping bag or a plastic baggie with the tip snipped off. Pipe frosting onto each cookie and top with chocolate egg candies.

Ingredients

Peanut Butter Cookie Cups

  • 1 cup peanut butter creamy
  • 1 cup sugar
  • 1 egg

Buttercream Frosting

  • 1/2 cup butter softened
  • 2 cups powdered sugar
  • 1/2 tbsp vanilla
  • 2 tbsps milk
  • 5-6 drops green food coloring

Instructions

Peanut Butter Cookie Cups

  1. Preheat the oven to 350 degrees.

  2. In a medium bowl, mix together peanut butter, sugar and egg until crumbly dough forms.

  3. Roll dough into one-inch balls with your hands and place in a mini muffin pan. Use thumb to press small indention into each cookie.

  4. Bake for 12 minutes

  2. Add powdered sugar a half cup at a time and mix until combined.

  3. Add milk and mix until creamy.
