With everyone spending more time at home, we are spending more time baking. This week my daughter is working on her Cooking Merit Badge, and she needed to bake a dessert. Since shopping is limited to what we have on hand, she needed a simple recipe with few ingredients. Then I remembered the peanut butter cookies I used to make and when I spotted the mini chocolate chips a plan formed for four ingredient Chocolate Chip Peanut Butter Cookies!
Chocolate Chip Peanut Butter Cookie Recipe
These are old-fashion peanut butter cookies with chocolate chips! I love a good peanut butter cookie, but chocolate and peanut butter is even more yum! Mini chocolate chips are a perfect compliment to these cookies because you can still flatten the cookie with the fork and they add just a bit of chocolate. If you don’t have chocolate chips available, the recipe is also delish without them!
If you are short on chocolate chips, another alternative is to chop up a candy bar. (If you have any extras of those lying around.)
Since these are flourless cookies, it’s also one less thing you need to have in your pantry to make dessert!
Ingredients
- 1 cup sugar
- 1 cup peanut butter
- 1 egg
- 1/4 cup mini chocolate chips (optional)
Directions
Preheat the oven to 350 degrees.
In a medium bowl, mix together peanut butter, sugar and egg until crumbly dough forms.
Fold in chocolate chips. (optional)
Roll dough into one-inch balls with your hands and place onto a Silpat or parchment-lined baking sheet. The dough will not spread, so you can make this whole batch on one sheet.
Press down with the back of a fork and then press again from the opposite direction, to form the criss-cross pattern.
Bake cookies for 12 minutes and then allow to cool on the baking sheet.
Store in an airtight container.
My family enjoyed these cookies so much there have already been requests for her to make more.

I have so several jars of sunflower butter that I need to use up because I used them for school lunches. Both my daughters had someone in their class with peanut allergies this year. Do you think sunflower butter would work well in this recipe?
That is a really good question. I have never used sunflower butter, so I don’t know the consistency of it. My daughter asked if we could make these using Nutella instead of peanut butter. I think Nutella is runnier, but I told her we could try. I would say the same with the sunflower butter. I would love to hear how it turns out if you try it.
