Easter Bunny Cookie Cups

These Easter Bunny Cookie Cups will be the cutest thing on the table at your Easter celebration. And it will be our little secret how easy they were to make.

Easter Bunny Cookies

Everyone has their favorite treat, and mine are cookies. I’ve just never been a big cake fan, so as cute as cupcakes are — I just don’t love cake. (I know, gasp!) That’s why cookie cups are perfect because I can have my cookies and decorate them as cute as a cupcake.

To make these Easter Bunny Cookie Cups even easier, I start with Nestlé Toll House Cookie Dough from the refrigerator section at Publix. It makes delicious cookies (or cookie cups) and helps me pull of the cutest cookies in under an hour — including cooling time.

I love to keep my fridge stocked with Nestlé Toll House Cookie Dough so I can whip up a quick batch of cookies anytime. (Very handy when kids announce they need cookies for something the next morning at 8 pm.) I try to keep my eye out for promotions like the Cool Savings promotion happening 3/16/19 – 3/29/19 at Publix. It’s the perfect time to stock up on your favorite cool products – like Nestlé cookie dough. This cookie dough is 2/$5 during the promotion.

Easter Bunny Cookie Cups

My favorite part of making these cookie cups was snipping the marshmallows. It’s really quite fun.

Bunny Cookie Cup Ingredients

  • Nestlé Toll House Cookie Dough*
  • Butter or cooking spray
  • Large marshmallows
  • Pink sugar sprinkles

*I used chocolate chip cookie dough, but you can use your favorite flavor.

Buttercream Frosting Ingredients

  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 3-4 tbsp. milk 
  • 2 tsp. vanilla extract

Directions

In a greased mini muffin pan, place one piece of cookie dough in each muffin spot. Use your thumb to press cookie dough in the form of a bowl shape.

How To Make Cookie Cups

Bake cookies at 350 degrees for 10-11 minutes.

While cookies are cooling, make your frosting.

Beat the butter with an electric mixer at medium speed until fluffy. Add powdered sugar 1/2 cup at a time, allowing it to become well combined before adding the next 1/2 cup.

Once all of the powdered sugar has been added, add vanilla and milk. Continue beating until well combined and fluffy.

If frosting seems too thick, add an additional tablespoon of milk.

I know someone is going to ask if they can use store bought frosting. The answer is yes. You can use any frosting you like. I enjoy adding a bit of homemade and really like this easy buttercream frosting. So I recommend this. 

When cookies are completely cooled, remove from the muffin tin.

Snip marshmallows in half on the diagonal. Dip snipped edges in a shallow bowl of pink sugar sprinkles.

Marshmallow Bunny Ears

Tip – I recommend dipping the marshmallows in the sprinkles as you go. Otherwise, they end up sticking to each other and you create a sticky mess. 

Pipe frosting onto the cookie cups.

Place the decorated marshmallow halves on top of the frosting like bunny ears.

  11. Store in airtight container in refrigerator until ready to serve.

    Hello! Thanks for this cute recipe! I’m considering trying to for my daugher’s first birthday in June which will be bunny themed. I’m curious about the yield. You get 36 cookies from one package of cookie dough? And I see your muffin tin has 24 spots as most mini ones do I think, so you used two tins to do it all at once? Thanks!

      I have done it both ways. I own 2 mini muffin tins, so I have put them rest in a separate tin and baked together. But I have also baked 2 separate batches — one with 24 and one with 12. Just depends if I feel like washing two tins to be honest 🙂
