Ingredients

Peanut Butter Cookie Cups

  • 1 cup peanut butter creamy
  • 1 cup sugar
  • 1 egg

Buttercream Frosting

  • 1/2 cup butter softened
  • 2 cups powdered sugar
  • 1/2 tbsp vanilla
  • 2 tbsps milk
  • 5-6 drops green food coloring

Instructions

Peanut Butter Cookie Cups

  1. Preheat the oven to 350 degrees.

  2. In a medium bowl, mix together peanut butter, sugar and egg until crumbly dough forms.

  3. Roll dough into one-inch balls with your hands and place in a mini muffin pan. Use thumb to press small indention into each cookie.

  4. Bake for 12 minutes

Buttercream Frosting

  1. In a medium bowl mix the butter, vanilla and green food coloring.

  2. Add powdered sugar a half cup at a time and mix until combined.

  3. Add milk and mix until creamy.

  4. To create the Easter nests, place frosting in a piping bag or a plastic baggie with the tip snipped off. Pipe frosting onto each cookie and top with chocolate egg candies.
