Cheesy Chicken And Broccoli Foil Packs

What’s easier to clean up then one-pot meals? Foil pack meals! You can even eat right out of the foil if you choose. Talk about a quick meal for busy nights. And it’s all the flavors my kids love – cheesy chicken, bacon and ranch. These cheesy chicken and broccoli foil packs were a winner in our house.

If you have kids who like to help in the kitchen, this is the perfect meal to let little ones assist with. Even if your kids aren’t used to helping, they can start with this meal because all they really have to do is layer the ingredients on a sheet of foil. Next time we make this meal, I plan to turn over the entire job to my 10 year old. She won’t even mind the clean up. Ha!

Cheesy Chicken And Broccoli Foil Packs

A note about broccoli – The recipe calls for broccoli florets. Because I’ve been recovering from a pinched nerve in my neck (miserable pain), my wonderful husband made our grocery run. He assumed the recipe meant frozen broccoli. I believe the recipe meant fresh. I didn’t want to put frozen broccoli directly into the packets, so I defrosted it (less than half the package directions). Ultimately, this meant our broccoli was cooked twice. Fresh broccoli would hold up better, but in a pinch, frozen works too.

Ingredients

  • 1 pkg (6 oz.) Stove Top® Stuffing Mix for Chicken
  • 1 ½ cups water
  • 6 small boneless skinless chicken breasts (1 ½ lb), ½ in. thick
  • 4 cups broccoli florets
  • 1 ½ cups Kraft® Shredded Cheddar Cheese
  • ½ cup Oscar Mayer® Real Bacon Bits
  • ½ cup Kraft® Classic Ranch Dressing

Tip – I recommend non-stick foil. Otherwise, you need to spray the foil in order to prevent the stuffing from sticking to the foil.

Directions

Heat oven to 400°F.

Combine stuffing mix and water; spoon onto centers of 6 large sheets heavy-duty foil.

Cheesy Chicken and Broccoli

Top with remaining ingredients; fold to make 6 packets.

Place in single layer on rimmed baking sheet.

Bake 30 to 35 min. or until chicken is done (165°F).

Hobo Packet Recipe

Remove packets from oven; let stand 5 min. Cut slits in foil to release steam before opening packets.

      Sure. We prefer chicken breasts, so I rarely cook with chicken thighs, but you certainly could. Enjoy.
