Beef Taco Salad Recipe From Best Meals Happen at Home

Dinner time is family time. Whether we are making a family favorite or trying a new recipe, sitting down with the family to enjoy a meal is my favorite time of the day. Of course, the best meals are the ones when the kids rave about the meal, so if you are looking for one of those easy meals the whole family will love I’ve got the answer. Beef Taco Salad Recipe

My family loves taco Tuesday. But we don’t always have tacos, we like to mix up our favorite ingredients. Burritos, enchiladas, fajitas, taco casserole we love it all. One thing we hadn’t made before was a taco salad, thanks to the suggested from Best Meals Happen at Home now we have. And my daughters are already asking when we can have it again. 

Ingredients

  • 1 box Betty Crocker™ Suddenly Pasta Salad™ Southwest Pasta Salad
  • 1/3 cup mayonnaise
  • 4 tablespoons milk 
  • 1 lb. lean (at least 80%) ground beef
  • 1 package (1 oz.) Old El Paso™ taco seasoning mix
  • 4 cups chopped romaine
  • 1 cup pico de gallo*
  • ¼ cup sliced olives
  • ¼ cup chopped fresh cilantro leaves
  • ¼ cup sliced scallions*
  • 2 cups corn chips

*My kids reject all onions, so we substituted chopped tomatoes for pico de gallo and left out the scallions to make it a better fit for our family. 

Beef Taco Salad Ingredients

Directions

Make pasta salad as directed on box; place in large bowl, and set aside.

In 10-inch skillet, cook beef over medium heat until brown, stirring occasionally;
drain. Stir in taco seasoning mix and 1/4 cup water; simmer until thickened, stirring occasionally. Set aside to cool slightly.

To large bowl of pasta salad, add romaine, pico de gallo, olives, cilantro and scallions; toss. Fold in warm seasoned beef. Top with corn chips; serve with your favorite taco toppings.

  • 1 box Betty Crocker™ Suddenly Pasta Salad™ Southwest Pasta Salad

  • 1 packet Old El Paso™ taco seasoning mix 1 oz
  • 4 cups chopped romaine
  • 1 cup pico de gallo

  • 1/4 cup sliced scallions
  • 2 cups corn chips

Instructions

  1. Make pasta salad as directed on box; place in large bowl, and set aside.
