Cheesy Carrot Snacks

tsm 2As the weather warms up, it is time to head outside. My favorite sound of spring is the sound of kids laughing as they run, jump and play outside. But before I send my kids outside after school, they need to fuel up with a snack. They want to reach for chips, I want them to reach for something more hearty that will fill their bellies and give them energy for play. Cheesy Carrot Snacks are my answer.

Homemade Healthy Kid Snacks
This high-protein snack is packed with veggies and lots of cheese. Oh and they are fantastic. If you are familiar with latkes (AKA potato pancakes), these Cheesy Carrot Snacks have a very similar texture. But they taste like cheesy carrots – so yummy. 

What do my kids think? They gave them a thumbs up as the ran out the door to play with the neighbors clutching a Cheesy Carrot Snack in each hand.

The first batch didn’t last long. I recommend making a double batch because they heat up quickly in a toaster oven for snacking leftovers. Although my kids were happy to eat them cold out of the fridge, I like a little crispness from the toaster.

Ingredients

  • 1 cup grated carrots, packed (approx 3 large carrots)
  • 1/4 cup water
  • 1 cup shredded cheese
  • 2 eggs
  • 2 tablespoons ground rolled oats
  • 1 tablespoon ground flaxseed

Directions

Preheat oven to 375.

Peel and grate carrots. Place carrots in a microwave dish with 1/4 cup water, cover with paper towel and microwave for three minutes.

Drain water completely. After draining, place carrots on paper towel and squeeze out more water. Dry carrots as well as possible.

Place rolled oats and ground flaxseed in blender or food processor and grind to flour. 

Note about oats and flaxseed — I use rolled oats and ground flaxseed in my smoothies, so I keep both on hand. If you don’t have flaxseed, sub with an extra tablespoon of ground oats. 

Mix dried carrots, oat flour, shredded cheese, and eggs in a bowl.

Place spoonfuls of the mixture onto a silicone matt or parchment lined cookie sheet. Use the back of the spoon to flatten each one.

Bake for 17-20 minutes until edges brown and crisp. 

Makes 18 Cheesy Carrot Snacks.
