Sometimes the key to making dinner exciting is to present it in new way. My kids love meatballs, and meatballs stuffed inside a biscuit — that’s unique and fun. Meatball bombs are our new favorite way to eat meatballs.

Because they are quick and easy, meatball bombs are a great meal idea for busy school nights, which is every night around here. Between dance, gymnastics, piano, Girl Scouts, chorus, homework and a new baby, busy never stops. So most meals need to be quick and something the whole family can agree on.

I was able to warm the frozen meatballs in the oven while I helped with homework, assemble the meatball bombs in minutes and go back to homework while the meatball bombs cooked. (I even threw a frozen veggie in the microwave to complete the meal.) Quick and easy – just what moms need on busy nights.

Of course, the best part is that everyone cleaned their plates. Dinnertime success. 

Ingredients

  • Cooked Perfect Frozen Meatballs – Italian Style
  • Refrigerator biscuits
  • Marinara sauce  
  • Mozzarella cheese
  • Italian seasoning
  • Butter

Cooked Perfect Meatball Bombs

Directions

Heat meatballs in the oven for 15 minutes at 350 degrees. 

Flatten a biscuit and place a spoonful of sauce in the middle of the biscuit. Top with a slice of mozzarella, a meatball and a little more sauce.

Fold sides up and pinch edges to enclose sauce, cheese and meatball inside. 

Place dough balls on a non-stick baking surface (I recommend a silicone baking mat).

Melt two tablespoons of butter and spread on each ball and top with a sprinkling of Italian seasoning.

Cook in oven at 350 degrees for 15 minutes or until golden.

    A beginning cook looking for a simple recipe using delicious Cooked Perfect meatballs would need to know that you cook these Bombs seam side down – otherwise they open up like blooming flowers. I found the sweet taste of Grands biscuits did not go well with Italian flavors. Next time I think I will try Pillsbury pizza dough. Also, solid mozzarella just sits there in a lump. I think I will try grated mozzarella next time.

    • You are correct, they should be placed upside down (as pictured) for best results. Although, they should not open if you seal tight. As far as the cheese, did you use a block of mozzarella – like that you would grate? That is the only way I can think of your mozzarella sitting there in a “lump.” Fresh mozzarella melts perfectly and is very gooey, as shown in the pictures.
