There’s nothing more refreshing than an ice-cold lemonade on a hot summer day. Just in time for Labor Day weekend, I have the perfect pairing with a glass of Sunkist Lemonade for your end of summer BBQs — grilled lemonade chicken kabobs.
If you have never tried lemonade chicken, you don’t know what you are missing. A sweet and tangy marinade that will have you dreaming of summer days in the pool. Sunkist Lemonade is the flavor of summer, and these lemonade chicken kabobs are the perfect way to enjoy the flavor in a whole new way.
Oh and the fresh mint, that was my husband’s idea. I wasn’t so sure, but he was right — it gives it that extra something. Of course, the kids baulked at “green things” on their chicken, so they missed out, but you have to try it. (Sans green things, my kids gobbled up the lemonade kabobs insisting that we make them again soon.)
Grilled Lemonade Chicken Kabobs
Ingredients
- 1 can (12 oz) Sunkist Lemonade
- 2 tablespoons brown sugar
- 2 tablespoons soy sauce
- 1 teaspoon garlic powder
- 1 – 2 pounds boneless chicken breast
- 2 – 3 sprigs fresh mint, finely chopped (optional)
- 10 inch Kabob skewers
Directions
Cut chicken breasts into cubes for kabobs.
Combine Sunkist Lemonade, brown sugar, soy sauce and garlic powder in a medium storage container with lid, add cubed chicken, cover and store in refrigerator overnight.
Remove chicken from marinade and discard marinade.
Skewer chicken and grill, covered, over medium heat for 10-15 minutes turning several times.
Sprinkle fresh mint on kabobs and serve.
What’s great about grilled lemonade chicken kabobs is that most of the work is done the day before. So you can prep them when you have time, and then they made for a quick meal. Whether you have spent the day relaxing in the pool or it’s been a busy day, the flavor of summer is ready in under 20 minutes.
