Red, White And Blue Ice Pops Recipe

There is nothing more refreshing than a frozen treat on a hot summer day, and if my girls had their way every day would be filled with sweet frozen treats. To make frozen treats even more special (and a lot healthier), we like to create our own ice pops. Our newest creation – Red, White And Blue Ice Pops!

4th of July Ice Pops

Just in time for the 4th of July, these Red, White And Blue Ice Pops are made from fresh Florida watermelon, Florida blueberries, coconut water and a hint of lime. And they are just as delicious as the fresh fruit ingredients. Yum, yum, yum.

Plus these Red, White And Blue Ice Pops are so easy to make kids can make them (with a little supervision, of course). The hardest part is waiting for each layer to freeze. Sissy was ready to eat them the moment we poured the first layer.

Red, White And Blue Ice Pops

Ingredients

  • 1 cup fresh blueberries
  • 1/2 cup coconut water
  • 1 1/2 cup fresh watermelon chunks
  • 1 tablespoon lime juice
  • Ice pop mold

Directions

Place the blueberries in a blender and puree. Add a splash of coconut water to thin the blueberry puree. Then carefully pour the puree into the mold filling approximately 1/3 of the mold. The first couple of times I made dribbles down the side of the mold. But I quickly got the hang of pouring neatly and used a paper towel to wipe off some of the mess.

Freeze 2-4 hours.

Pour coconut water on top of the frozen blueberry. Be sure to use cold coconut water so as to not thaw the blueberries.

Return to freezer and freeze for 2-4 hours.

Blend fresh watermelon chunks in the blender with the lime juice. (Again be sure watermelon and lime juice are cold so they don’t thaw the coconut water.) Fill the rest of the mold with the watermelon puree.

Return to freezer and freeze for 2-4 hours.

Serve and enjoy these Red, White And Blue Ice Pops for the 4th of July and all summer long.

Red White And Blue Popsicle

This is the ice pop mold I use. I like the classic shape ice pops it creates. When you remove ice pops from the freezer, run the mold under warm water for a few seconds to loosen the pops and they will slide right out.

Red, White And Blue Ice Pops Recipe

Ingredients
