José Olé Taquitos And Queso Dip Recipe

When the invite went out for a friend’s annual Christmas party it included the usual request to bring an appetizer or dessert to share. What was new about this year’s invitation was the instruction to bring a “manly appetizer.” 

Men eat more at her parties, she went on to explain, and they generally prefer protein based appetizers. Busy wrapping gifts all day before the party, I took heed to her request and pulled off a quick and easy “manly” appetizer that was a hit — José Olé Taqiutos and queso. 

Taquitos Queso Dip
The requested protein-based appetizer took only 10 minutes to prepare and was a hit. There were no taquitos leftover, and I saw other chips being dipped into the queso too.

Success in 10 minutes, that’s smart party prep.  

Queso Dip Recipe

Prep the taquitos and queso dip right before party time. You can kick up the heat with hot salsa if you choose, but for parties I typically make medium.

Ingredients

  • 1 block of cheddar cheese (8oz)
  • 1/2 cup of chunky salsa (1/2 standard jar)

Directions

Slice cheese into cubes and place into microwaveable bowl. Heat for 1 minute. Stir and add salsa. Return bowl to the microwave and heat for an additional 1-2 minutes. Remove from microwave and stir well. 

Serve warm.

While making the queso dip, heat José Olé Taquitos in oven at 400 degrees for 10 minutes.
