No-Bake Rainbow Cookies With Cream Cheese Frosting

Sometimes you just need an easy dessert idea. Something that looks great, but can be whipped up in just a few minutes. That’s when you need No-Bake Rainbow Cookies With Cream Cheese Frosting. They are easy-peasy to make, and really good. 

A little bit store-bought, a little bit homemade and a whole lotta yum! I promise, you can make these cookies in less than 15 minutes.

These rainbow cookies are simple enough to make as an after-school treat for your kids, but they would also be adorable for a Rainbow Birthday Party or even a Rainbow Loom Birthday Party. And, of course, they would be great for any St. Patrick’s Day celebration. 

In fact, you could use different colors of sprinkles to make these sandwich cookies for any holiday. Think of the possibilities! 

No-Bake Rainbow Cookies

Need an even easier treat? Use store-bought frosting. I won’t tell. (But I promise, the cream cheese frosting is really easy!)

Cream Cheese Frosting

  • 4 oz cream cheese, softened
  • 2 tablespoons butter, softened
  • 1 teaspoon vanilla
  • 1 cup powdered sugar

Directions:

Beat cream cheese, butter, and vanilla in mixer. Add powdered sugar and beat until the frosting reaches the consistence desired. Add more sugar if you’d like it sweater.

Place about a tablespoon size dollup of frosting onto a vanilla wafer. Place another wafer on top and lightly squeeze the two cookies together to form a sandwich and even out the layer of frosting.

Roll the sides of the exposed frosting into rainbow sprinkles.

Serve immediately or store in an airtight container until ready to serve.
