Pink Velvet Cupcakes With Cream Cheese Buttercream Frosting

Everything is better in pink, right? At least that’s what my six year old tells me.  And Valentine’s Day is the perfect time to indulge her pink sweet tooth with pink cupcakes. But these aren’t just any old pink cupcakes, they are Pink Velvet Cupcakes!

What’s the difference you ask? Instead of just making vanilla cupcakes pink, these cupcakes are buttermilk based, which gets them a rich flavor that is anything but vanilla. And don’t let that white frosting fool you either, it is cream cheese buttercream frosting. Oh my, this frosting is good.

In fact, for a girl who only really likes chocolate cupcakes, even I can’t stop eating these cupcakes. I decided it was better for my waistline to share cupcakes with our friends, so everyone got to try them. 

 Pink Velvet Cupcakes

Ingredients

Pink Velvet Cupcakes:

  • 1 cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 3 drops pink gel food coloring
  • 3 eggs, room temperature
  • 1 ½ teaspoons vanilla extract
  • 2 ½ cups flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup buttermilk

Cream Cheese Buttercream:

  • 1/2 cup unsalted butter, softened
  • 4 ounces cream cheese, room temperature
  • 4 cups powdered sugar
  • ¼ cup heavy cream
  • 1 teaspoons vanilla extract

Directions

Pink Velvet Cupcakes:

  1. Preheat oven to 350. 
  2. Cream together butter, sugar and food coloring until light and fluffy. 
  3. Add eggs beating well between each egg. 
  4. Add vanilla and beat to combine.
  5. In a medium bowl, whisk together the dry ingredients (flour, baking powder, baking soda and salt).
  6. Add half of the flour mixture to the creamed butter and beat until combined. Then add half the buttermilk and beat until combined. Scrape sides well. 
  7. Add the remaining flour and beat until combined. Add the remainder of buttermilk, beating until smooth.
  8. Fill cupcake lined tins ⅔ full.
  9. Bake 18-20 minutes.
  10. Remove cupcakes from pan, and cool completely on wire rack before frosting.

Cream Cheese Buttercream:

  1. Using a paddle attachment in a stand mixer beat butter and cream cheese until smooth.
  2. Add half of the powdered sugar and beat on low. Add the remainder of the powdered sugar and beat on low until mixed well.
  3. Add vanilla.
  4. Slowly add cream into mixture while beating on low.
  5. Increase speed to medium and beat until creamy.
  6. Spoon frosting into a piping bag (or plastic bag with the tip cut off) and frost cupcakes.
  7. Decorate with Bakery Crafts Valentine’s Day Decorating Kit and Candy Hearts.

The super cute Valentine’s Day decorations are from Walmart, both the love banner and the candy hearts are from Bakery Crafts. (The little banner looks handmade, doesn’t it? But now you know my secret; store-bought decorations. Shhhh!) You have probably seen Bakery Craft products before, the company makes tons of licensed cake decorations too. 

My girls loved the banner, but they were most excited by the gummy candy. The whole set up would be perfect for a party or just to surprise your Valentine!
