Do you have one of those fancy ice pop bars near where you live? We don’t, but while visiting family we stopped at one and I have been obsessed ever since. Since we don’t have one I can visit, I decided to bring the concept home by turning or favorite Whole Fruit fruit bars into fancy chocolate coconut covered bars. Whole Fruit Fruit Bars
Whole Fruit fruit bars are one of my favorite treats to keep in the fridge because not only are they a cool treat everyone loves, but they are made with real chunks of fruit. The simple ingredient list includes words I can pronounce and recognize, which means no mom guilt when I give them to my kids or indulge myself. A perfect way to cool down on a hot afternoon.
Whole Fruit flavors include strawberry, coconut, black cherry, mango, watermelon and more. Whole Fruit fruit bars are dairy-free, gluten-free, and peanut-free and there are organic options too. Strawberry and coconut are tied for my favorite flavors, which is what inspired my recipe below.

Homemade Magic Shell
While these bars were inspired by my favorite Whole Fruit flavors (strawberry and coconut), you could change up the topping to anything you want – sprinkles, fresh fruit chunks, etc. Next time we make these, I plan to sprinkle some Cayenne pepper on the chocolate. That’s how I had my bar done at the little shop this summer, and it was amazing.
The key ingredient in this recipe is the coconut oil, this is what makes the chocolate harden quickly on the Whole Fruit bar so it doesn’t remain a sticky mess. It doesn’t change the taste of the chocolate, it just turns your chocolate into homemade magic shell.
Ingredients
- 2 cups chocolate chips (I used dark chocolate)
- 6 tablespoons coconut oil
- Whole Fruit bars (I used strawberry)
- Unsweetened coconut flakes
Directions
Add chocolate chips and coconut oil to a tall glass jar. I used a wide-mouth mason jar.
Microwave for 1 minute at half power. Stir well. If small chunks of chocolate remain, microwave again for 30 seconds at half power.
Dip the Whole Fruit bar into the chocolate and sprinkle immediately with coconut flakes. Press the coconut flakes gently into the chocolate.
If you are making a bunch, you can slip the bar back into the plastic sleeve and back into the freezer to serve later.
When you start to run low on magic shell, you can use a spoon to drizzle it on the Whole Fruit bars. If you have any remaining magic shell when you are done decorating your bars, you can put a lid on it and put it in the refrigerator for next time.
