Easter Bunny Cookie Cups

Ingredients

Bunny Cookie Ingredients

  • Nestle Tollhouse Cookie Dough
  • Butter or cooking spray
  • Large marshmallows
  • Pink sugar sprinkles

Frosting Ingredients

  • 1/2 cup 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 3-4 tbsp. milk
  • 2 tsp. vanilla extract

Instructions

  1. In a greased mini muffin pan, place one piece of cookie dough in each muffin spot. Use your thumb to press cookie dough in the form of a bowl shape.
  2. Bake cookies at 350 degrees for 10-11 minutes.
  3. While cookies are cooling, make your frosting.

  4. Beat the butter with an electric mixer at medium speed until fluffy. Add powdered sugar 1/2 cup at a time, allowing it to become well combined before adding the next 1/2 cup.

  5. Once all of the powdered sugar has been added, add vanilla and milk. Continue beating until well combined and fluffy. 

  6. If frosting seems too thick, add an additional tablespoon of milk.

  7. When cookies are completely cooled, remove from the muffin tin.
  8. Snip marshmallows in half on the diagonal. Dip snipped edges in a shallow bowl of pink sugar sprinkles.
  9. Pipe frosting onto the cookie cups.

  10. Place the decorated marshmallow halves on top of the frosting like bunny ears. 

  11. Store in airtight container in refrigerator until ready to serve.
