One of my family’s favorite flavors is pesto, so when I was asked to create two pesto dishes sponsored by Barilla it was easy to come up with recipes my family loves: Pesto Caprese Pasta Salad and Pesto Parmesan Baked Tomatoes. Yum!
At 18 weeks pregnant, I am all about easy recipes. Oh, who am I kidding — I am always all about easy recipes. And nothing could be easier than these pesto-based dishes. And the Pesto Caprese Pasta Salad can be made ahead of time, so it is ready to serve right out of the fridge. (It’s also great multiplied for a pot luck – if you are so inclined.)
Pesto Caprese Pasta Salad
- 1 cup Barilla Organic Penne Pasta, cooked, drained and cooled
- 1/2 cup cherry tomatoes, quartered
- 1/2 cup pearl mozzarella balls
- 2 tablespoons Barilla Pesto Sauce
After cooking and cooling the pasta add tomatoes, mozzarella and pesto and stir until well combined.
Serve immediately or chill in fridge until ready to serve.

Pesto Parmesan Baked Tomatoes
- 3 tomatoes
- 3 tablespoons Barilla Pesto Sauce
- 1/4 cup shredded parmesan cheese
Slice tomatoes in half and spread 1/2 tablespoon of pesto on each half. Sprinkle with parmesan cheese.
Bake in oven at 400 degrees for 18-20 minutes.
Serves 2 – 3
