Everyone has a signature dish, and for my friend Megan, I like to think it is her Protein-Packed Mac and Cheese. (She also has an awesome cheese spread, but that’s another story.) The secret ingredient in her dish is cottage cheese. Until I tasted her mac and cheese, I had never even considered cottage cheese as an ingredient in mac and cheese, but one bite and she had me convinced.

This protein-packed mac and cheese is her answer to potluck dinners for kids. All the kids ever want is mac and cheese, but she wanted them to have some more protein, thus her dish. And you know what, every single kid on the block gobbles up her mac and cheese — every time. As long as my kids eat her mac and cheese and some fruit, I consider it a potluck win.
Protein-Packed Mac And Cheese
Ingredients
- 16 oz Friendship Dairies cottage cheese
- 8 oz Friendship Dairies sour cream
- 2 cups cheddar cheese
- 1 egg, beaten
- 8 oz macaroni noodles
- 1/4 tsp salt
Directions
Boil noodles for 6-7 minutes and drain.
In a large bowl combine noodles, cottage cheese, sour cream, cheddar cheese, egg and salt.
Pour mixture into an 8×10 baking dish.
Bake at 350 for 25-30 minutes.
Serve warm.
How much protein does this protein-packed mac and cheese yield?
