Parmesan And Herb Crusted Chicken Salad

Something funny happened at dinner last night. My kids begged for salad, ate it and asked for seconds. Sounds crazy, right? I know, it really does, but it happened. It all started with a parmesan and herb crusted chicken and me trying to eat more leafy greens. The result was a delicious parmesan and herb crusted chicken salad that the whole family loved.

Here’s the thing, I am not a salad eater. I don’t care for lettuce and I am really picky about dressing. But I do love spinach and I have discovered a dressing I love (lemon vinaigrette in case you are wondering). So I have been trying to create spinach based dinners for myself.

When I saw The Good Table in parmesan and herb I decided it was the perfect start to a dinner salad. I made parmesan and herb crusted chicken for everyone and served the girls chicken over a bad of rice and peas. But for my husband and I — a salad.

The girls were perfectly happy eating their dinner, until they realized we were eating something different. Instantly they wanted what we had! It was completely unplanned reverse psychology.

I couldn’t say no to them eating salad. So I made each of them a tiny spinach salad, which they ate before they ate their rice and begged for seconds!

My kids have never willingly eaten spinach. Ever.

But there we were, three non-salad eaters happily munching on our salads.

Clearly, I can’t promise your kids will eat this salad. But what I can tell you is that chicken made with The Good Table in parmesan herb is delicious. And if you want to make a quick and easy dinner salad, I highly recommend this one.

Parmesan And Herb Crusted Chicken Salad

Ingredients

  • Chicken Breasts
  • The Good Table – Parmesan And Herb
  • Spinach
  • Shredded carrots
  • Parmesan cheese
  • Lemon vinaigrette

Directions

Prepare chicken according to package — mix parmesan and bread crumbs, coat chicken in creamy basil sauce provided, toss in parmesan/bread crumbs mix and cook for 22 – 27 minutes at 400 degrees.

Assemble salad.

    I’m interested in the lemon vinaigrette. Do you make it or can you buy it? I will try this recipe. It sounds wonderful.

    • Hi Debbie – I buy it, and it is amazing. The brand is Marzetti Simply Dressed. My grocery store (Publix) had it to sample one day, and I fell in love. I am sure you could make it too, but this brand is fantastic. (There is a product locator on the company’s site, Google it!)
