Valentine’s Day Stained Glass Mickey Mouse Cookies

Anytime is a good time to celebrate a love for Mickey Mouse, but it seems especially appropriate at Valentine’s Day. This summer we made 4th Of July “Stained Glass” Red, White & Blue Star Cookies, which were a huge hit. So I thought it would be fun to make a Valentine’s Day version of Mickey Mouse cookies, introducing Valentine’s Day Stained Glass Mickey Mouse Cookies.

Wouldn’t they be cute at a Mickey Mouse birthday party? Or even a Minnie Mouse Birthday party, the cookies are so tasty I don’t think anyone is going to notice there is no bow, you could totally pass them off as Minnie Mouse Cookies! 

Valentine’s Day Stained Glass Mickey Mouse Cookies

Ingredients

Directions

Pre-heat oven at 350 degrees.

In a small bowl mix flour, salt and baking powder. Set aside.

In a large bowl, mix butter, sugar, eggs, vanilla and cocoa. Gradually combine mixtures until smooth.

Cover dough and refrigerated for at least 20 minutes. 

The trick to these cookies is to roll the dough very thin. Transporting the cookies to the cookie sheet is difficult. If you have trouble, cut out the cookies directly on the foil-covered cookie sheet. 

Mickey Mouse Cookie
Place your Yum Earth Lollipops (or other clear, hard candy) in a thick plastic baggie and smash. (Pomegranate Pucker makes the best red.) I use Yum Earth because they are made with all natural fruit extracts and no artificial dyes or flavors, plus they are my girls’ favorite lollipops. 

Fill each Mickey Head with crushed candy. One crushed lollipop fills two cookie centers. 

Bake for 5 minutes in the oven, or lightly crisp.

Let stand on cookie sheet about 2 minutes before removing so candies have a chance to harden. If you use non-stick foil, they will peel right up. If not, well you were warned! 

The Stained Glass Mickey Mouse Cookies should be stored between sheets of parchment paper so the candy centers don’t stick to each other.

  1. These are awesome! My family loves Disney and we love to incorporate it into what we eat. We have shaped everything from pancakes, cookies, homemade pizza, bagels, and slices of cheese and apples into Mickey Mouse ears. My daughters will love these cookies!
