Every Easter we dye dozens of eggs, and every year the day after Easter I face the challenge — what to do with all those Easter eggs? The quickest solution is to make something that can be shared with friends and family at Easter dinner. And the easiest thing to make in a hurry between the egg hunt and lunch is deviled eggs.
This year, spice up your average deviled eggs with MIRACLE WHIP.
Deviled eggs are a favorite in my family. Everyone loves them, but no one more than my husband. When I saw this recipe for Spicy Deviled Eggs, I knew it would be a perfect way to change up one of his favorite side dishes with a little zing.
The best part is that within a matter of minutes you can make two batches of deviled eggs one that is muy caliente and another that is zesty but still mild enough to be kid friendly. Which is exactly what I did, I made half of my batch with jalapeño peppers and the other half with out. Both were excellent.
Spicy Deviled Eggs
Ingredients:
- 12 hard-boiled eggs
- 2/3 cup MIRACLE WHIP Dressing
- 2 tsp. GREY POUPON Dijon Mustard
- 1 jalapeño peppers, seeded & finely diced
Start with your hard-boiled eggs, and cut the eggs lengthwise in half. Remove yolks; place in a bowl. Mash with fork. Add remaining ingredients; mix well. Spool filling into a plastic bag, trim off a corner and pipe into the egg whites. Sprinkle with paprika. Garnish with additional jalapeño slices, if desired.
In case you don’t have an overflowing supply of colored eggs, here is how to make the perfect hard-boiled eggs (with no green tinge):
Place eggs in single layer in saucepan; add enough water to completely cover eggs by at least 1 inch. Bring water to a boil; cover. Remove saucepan from heat; let stand 15 min. Drain eggs; immediately place in bowl of ice water. Let stand until completely cooled, changing water if necessary. Perfectly hard-cooked eggs will have a firm yellow center with no greenish tinge.
