Unicorn Marshmallow Pops

One of my favorite treats to make for birthday parties are marshmallow pops. They are always such a hit with kids that I have made them for every kids birthday party for the past couple of years. Now, even the regular guests have come to expect them. Basic marshmallow pops are super easy to make, then I dress them up according to the party theme. I think the unicorn marshmallow pops I made for my daughter’s unicorn party are my favorite yet.

As I said, I have made these so many times the kids expect them. So it has become a fun challenge to incorporate them into each party theme. (Apparently, I will be making cheetah ones this month!)

I often make my marshmallow pops without a stick, however, you could make these unicorn marshmallow pops on a stick if you choose.

Unicorn Marshmallow Pops

The first time I made marshmallow pops, it was a bit tricky to get the hang of. Mostly because it is a messy process. (Even after making them over and over, it’s still a messy process – just embrace it.) But I can give you some tips to help make it easier.

This was the first time I have ever worked with fondant or the gold mist, but I am happy to report that it was quite simple. The best part about the fondant is that like play dough if you mess up, you can just squish it and start over.

I generally make one marshmallow pop per guest plus a couple of extras. One bag of jumbo marshmallows should be all you need. You will need 1-2 bags of candy melts for a small/medium party.

Fondant Unicorn Horns

Take a piece of fondant and roll it into a small ball approximately the diameter of a dime. Roll the ball into a long, even snake-like shape. Carefully fold the piece of fondant in half and gently twist sides together to form a horn shape. The middle becomes the bottom of the horn.

Stick a toothpick in the bottom of the horn and set aside to harden. I punctured holes in a small cardboard box and placed the toothpicks with horns on them in the wholes to keep the horns upright as the fondant hardened.

Once fondant is hardened, spray horns with Wilton Gold Color Mist. I found that my horns needed two coats. Set horns aside to dry.

Tip, I made my horns the day before I made the candy melts so that I didn’t have to rush.

Place 20 candy melts in a medium glass bowl and melt according to package directions.

Place a marshmallow in the melted candy. Use one spoon to roll it in the candy and then lift it out of the candy. Use a second spoon to smooth the melted candy around the sides of the marshmallow to give it a smooth surface. Carefully place the candy coated marshmallow on silpat matt or other non-stick surface.

While candy is still melted, place the fondant horn and Sixlets on top of the marshmallow. You may need to hold the horn in place briefly as candy cools.

If you need more candy or the candy starts to harden, simply add a few more pieces and melt according to package directions again.

Allow candy to cool and harden. You can place in the refrigerator to speed up the process. Once hardened chip off any excess candy that might have dripped around the edges.

Unicorn marshmallow pops can be made ahead of the party and stored in an airtight container for a couple of days. I usually make them a day or two before the party.
