I am sure I had chicken schnitzel before meeting my husband, but the first time I remember eating chicken schnitzel was in New Jersey at his grandmother’s house. To me chicken schnitzel is her dish, and I instantly fell in love with it. I have partnered with Progresso today to share this yummy family dish.

Today, my husband keeps alive the tradition of chicken schnitzel by making it for his family. Yes, this is his dish he makes. It is a comfort food for us all that brings back fond memories of Gran-Gran and our visits to New Jersey. It’s amazing how food is more than just food, it is filled with memories and just a taste can take us back.

The secret to the best chicken schnitzel is in a good meat tenderizer (yes we own one just for chicken schnitzel) and Progresso Bread Crumbs Italian Style

I can’t remember what Gran-Gran used to pair with her chicken schnitzel, I was always so focused on the chicken! But in our house we typically pair it with a veggie (like green beans) with our favorite roasted potato crisps or a caprese salad.

This is one of those reliable meals that my girls will gobble up without hesitation. In fact, everyone was done with dinner by the time mom finished with photos. Sigh, such is the life of a blogger. But it was still tasty!

Chicken Schnitzel Recipe

Ingredients

  • 2 cups Progresso Bread Crumbs Italian Style
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup grated parmesan cheese
  • 4 tablespoons of olive oil
  • 4 chicken cutlets

Directions

With a meat tenderizer pound the chicken cutlets thin (approximately 1/4 inch).

Combine breadcrumbs and parmesan cheese in a wide, shallow bowl and set aside. 

In another bowl, beat eggs and add salt and pepper.

Dip cutlets in egg mix coating the entire chicken. Then dip cutlets in breadcrumb mix and coat well. Set aside on cutting board. 

Warm two tablespoons olive oil in a large skillet on medium heat.

Cook two cutlets at a time, turning once, until golden and crispy (approximately 3 minutes per side). Transfer cooked chicken to a plate and cover with a paper towel to retain heat.

Add the other two tablespoons of olive oil to the skillet and repeat with additional cutlets.
