Mini No-Bake Chocolate Mint Pies

Most of my favorite foods are deep seated in years of family tradition. From appetizers to desserts, my favorite recipes are those have I have eaten since I was a girl. And holidays are just not the same without those special recipes. I hadn’t yet found my special recipe — the one that will become my contribution to the family tradition, but I think these Mini No-Bake Chocolate Mint Pies could be the winner. 

Last year my husband declared my Pumpkin Spice Truffles to the best thing I ever made. Well, move over Pumpkin Spice Truffles because hands down, these Mini No-Bake Chocolate Mint Pies take the cake (or the pie). Best thing I have ever made, right here. 

Mini Chocolate Mint Pies
It’s chocolate, it’s mint and it’s a no-bake pie. What more could you ask for in a holiday dessert?!

Seriously, these mini pies aren’t just pretty — they are downright divine. And please notice, no-bake pies. You won’t find an easier holiday treat that packs as much wow!

Because they are so easy they are great to make with kids. I am all about traditions, and I love the idea of starting a new family tradition making a holiday dessert that includes Hershey’s chocolate with my daughters. 

No-Bake Mini Chocolate Mint Pies

For the Crust

  • 10 Chocolate Cream Cookies
  • 2 Tablespoons Butter, Melted

For the Filling

  • 2 Cups Hershey’s Special Dark Chocolate Chips
  • 1 Tub Frozen Whipped Topping
  • ¼ Teaspoon Peppermint Extract
  • 16 Hershey’s Kisses Candy Cane Mint candies

Hershey's Mini Mint Chocolate Pie
Directions

Crush 10 cookies, including the cream middle, in the blender. Combine crushed cookies and melted butter.

Grease a mini muffin tin.

Fill 16 cups 1/3 of the way with crust, packed tightly.

Melt chocolate in the microwave on 50% power for one minute and stir. If not completely melted continue melting on 50% power for 20 second intervals.

Add peppermint extract and mix well.

Mix in whipped topping until combined thoroughly.

Fill cups the rest of the way with topping and refrigerate for 6-8 hours until set firm.

Run a knife along the edge of each pie and slide pies out of pan.

Top with a Hershey’s Kisses Candy Cane Mint candies. Store covered in the refrigerator until ready to serve.

Ingredients
