Easy Pumpkin Spice Chocolate Truffles

I have a major sweet tooth — major. And chocolate is my weakness. Chocolate anything really, but when I crave something sweet mid-day what I really want is a sweet piece of chocolate candy. 

Adding my love for chocolate to my love for all things pumpkin, I made a seasonal sweet treat – Easy Pumpkin Spice Chocolate Truffles. And seriously, these bad boys are so easy you could whip some up tonight!

In my head I planned for these to have solid orange sprinkles — you know, like a pumpkin. But can you believe it, no where locally sells orange sprinkles even in October. So I made do with orange, white and yellow sprinkles, which turned out cute (but if you can get solid orange…).

Easy Pumpkin Spice Chocolate Truffles

Ingredients

  • 2 cups semi-sweet chocolate chips (I used Hershey’s)
  • 1/2 cup International Delight Pumpkin Pie Spice <–coupon!
  • 2 tablespoons salted butter 
  • 1/4 teaspoon vanilla extract
  • Sprinkles

Directions

In a small sauce pan combine the chocolate chips and the International Delight. Melt chocolate over low heat, stirring continuously. As the chocolate melts add butter and vanilla, whisk ingredients together until well combined.

Remove from heat and continue whisking until smooth and creamy, not liquidy. 

Cover and chill in freezer for about an hour minutes (or refrigerate for 4-5 hours). I have no patience, so mine went into the freezer.

Next, go ahead and treat yourself — lick the spoon!!! You know you wanna!

Once firm, scoop spoonfuls into your hand and roll into a ball. Then roll balls through the sprinkles. This part is very messy, so be sure to keep a damp paper towel handy (or several). I wiped my hands between each truffle so the chocolate didn’t get on top of the sprinkles.

Truffles should be stored covered in the refrigerator. 

The Pumpkin Spice Chocolate Truffles are ah-mazing! Seriously chocolatey with just a hint of pumpkin, and they melt in your mouth. Yum! 

These would be perfect for an after dinner treat or a girls’ night. Whenever you serve them (even if you keep them all to yourself), they are a must try! Before you go shopping, be sure to grab a coupon from International Delight.
