I write a lot about quick and easy dinners because I really don’t love to cook and I am always trying to do about a dozen things when I need to be getting dinner on the table. I want to spend as little possible on dinner prep so we can actually sit down to enjoy eating dinner together. That’s what makes slow cooker recipes so awesome, and I have just discovered a way to make my slow cooker prep even simpler. For a home cooked meal, it doesn’t get easier than this slow cooker pot roast recipe.

Being fond of slow cooker meals so dinner is ready when it is time to eat is nothing new. But the problem with most slow cooker recipes is that there is still a lot of prep. Some of our favorite recipes include 20+ minutes of prep in the morning. This recipe is so simple, you can make it even on the busiest mornings.

Unwrap. Dump. Cook. Eat. That’s it. Less than 5 minutes prep, I promise!

Slow Cooker Pot Roast Recipe

Ingredients

  • 2.5 pounds of eye round roast (or chuck roast)
  • 1 bag of Simply Potatoes – Diced Potatoes with Onion
  • 25 baby carrots
  • 1 cup of water
  • 1 can mushroom soup
  • 1 packet powdered onion soup
  • 1 package frozen peas

Simply Potatoes
Directions

Place the entire bag of Simply Potatoes – Diced Potatoes with Onion at the bottom of your slow cooker. Add carrots, roast, water, mushroom soup and powdered onion soup.

Cook in slow cooker on low for 8 hours or if you are in a hurry on high for 4 hours.

During the last hour add frozen peas. Or cook peas in microwave according to package directions and add to slow cooker before serving.

  1. Pot roast is actually my favorite thing to make in the slow cooker – But I have really been wanting to make this beef barley stew that I saw on Pinterest last week. I would probably make that with the Simply Potatoes.

    I love using the Diced with onion Simply Potatoes and mixing with corned beef and add some onions, salt and pepper and it makes the best quick fix corned beef and potatoes, YUMMY

  3. We LOVE these at our house. It’s a breakfast staple. Fry them up, add some runny eggs on the side, maybe a piece of bacon or two…. SIGH. YUM.

  4. Great recipe. Love the idea of using Simply Potatos and much better then frozen hash brown potatoes. With a gluten free onion soup mix it is completely gf too.

  5. I will be making this easy pot roast recipe! But I also think my family would love the “Simply Traditional Potato Pancakes” I use Simply potatoes all the time, I never thought to go to their site to get recipes!

  6. I would make a nice traditional minestrone with carrots, green beans, tomatoes, white beans and cubed potatoes. We eat the plain hash browns from Simply Potatoes all the time!

    I would make the Chicken & mashed potato dumpling soup recipe. Only 15 minutes of prep work, done in 55 minutes. I checked the nutritional facts and only 3 grams of fat per serving – can’t beat that!

  8. I would make something and serve mashed potatoes with it. I just recently tried Simply Potatoes mashed potatoes and they were the best I have ever eaten.
