Easy Mashed Potatoes Recipe

We are a meat and potatoes family. Forget the fancy stuff; we like traditional, stick-to-your-ribs meat and potatoes, and mashed potatoes are one of my favorite ways to eat potatoes. The best part is that they don’t have to be hard, easy mashed potatoes are not only possible — they are delicious. 

Easy Mashed Potatoes
This is the perfect recipe for holiday entertaining because mashed potatoes are a good, wholesome side dish that everyone loves. Serve it with chicken, serve it with steak, serve it at your potluck holiday party. Just make these easy mashed potatoes. 

Easy Mashed Potatoes

This recipe is perfect for a family dinner because it serves four people, but it is also easily doubled or even quadrupled for a dinner party or large gathering. 

Ingredients

  • 3 medium red potatoes, cubes
  • 1/4 cup Country Crock Spread
  • 1/4 cup milk
  • 1/4 tsp. salt
  • 1 pinch ground pepper
  • 1/2 cup cheddar cheese (optional)

Directions 

  • Cover potatoes with water in 2-quart saucepan. Bring to a boil over high heat.
  • Reduce heat to medium and simmer uncovered 15 minutes or until potatoes are very tender, drain.
  • Return potatoes to saucepan, mash.
  • Stir in Country Crock and milk for a creamy, buttery taste.
  • Sprinkle with cheddar cheese (optional).
