I don’t normally buy Lucky Charms, but when March rolls around I just can’t help myself. They scream at me from the cereal aisle, “Buy me for St. Patrick’s Day!” This year General Mills tried to switch things up on me by having fancy marshmallows. I know they taste the same, but I wanted the classic marshmallows The problem, the classic marshmallows were only available in the GIANT box. After far too much internal debate, I bought the 20 oz box of cereal.
And then I got home. “What am I going to do with 20 oz of cereal that I only let my daughter eat on special occasions?!” What to do…
I stared at those marshmallows, which reminded me of a bag of marshmallows in my pantry and suddenly it hit me — Rice Krispie Treats with Lucky Charms!
I am sure I am not the first mom to come up with such a concoction, but I am sure that I am impressed myself (and more importantly, my daughter).
Lucky Charms Treats
Ingredients
- 6 cups of cereal (marshmallows removed)
- 3 cups of mini marshmallows (the regular white kind)
- 3 table spoons of butter
- 1 1/2 cups of Lucky Charms marshmallows (this is approx because I didn’t really measure)
Directions
After separating the Lucky Charms cereal from the marshmallows, melt the butter and white marshmallows in a pot on low. Once melted, remove from heat and quickly stir in cereal.
At the last minute, I decided to sprinkle in a few of the Lucky Charms marshmallows at this point for color. (The marshmallow goo was already cooling so the colorful marshmallows didn’t melt.)
After mixing well, I plopped the batch into my glass casserole dish (don’t forget to spray your dish so it doesn’t stick). Then I sprinkled the rest of the colorful marshmallows on top and pressed down.
Ta-da!
