Working from home, presents itself with unique problems. Because I am at the mercy of an infant’s naps to get work done, when I break for lunch I need something quick and easy. Since I am also a nursing mom, I also need something hearty. Wraps are a great go-to lunch, and a buffalo chicken wrap is one of my favorites.
Buffalo Chicken Wrap
To make this wrap quick and easy, I start with precooked chicken. Specifically, I use Tyson Refrigerated Fully Cooked Chicken. With the chicken precooked, this lunch is as easy as grabbing the ingredients and assembling them.
And should I tire of buffalo, I can always mix up my lunch by subbing in other flavors. But yum, buffalo is my fave.
For those who don’t work from home, we’ve found the best way to pack a wrap is to pack the ingredients in a small plastic container and pack the wrap separately. Then when lunchtime rolls around, my husband is able to assemble his wrap at work keeping the tortilla nice and fresh.
Ingredients
- Tyson Refrigerated Fully Cooked Chicken
- Buffalo sauce
- Ranch dressing
- Tortilla wrap
- Romaine lettuce
- Tomatos
- Blue cheese crumbles
- Avocado (optional*)
I love adding avocado to my buffalo chicken wrap, but avocados are so finicky. The day I made this wrap, my avocado hadn’t ripened enough. Good thing the Tyson chicken part is easy!
Directions
Toss a handful of pieces of Tyson Refrigerated Fully Cooked Chicken in two tablespoons of buffalo sauce and set aside.
Spread ranch dressing on tortilla. Top wrap with shredded romaine, diced tomatoes, blue cheese crumbles and buffalo chicken.
Wrap tortilla by folding in the sides and then rolling. Slice and enjoy.
When not taking photos of the whole process, a single wrap can be made in minutes. I can even make (and eat) it one handed when baby wakes from her nap. It’s a tasty lunch that is ready in a hurry thanks to Tyson Refrigerated Fully Cooked Chicken.
Bonus snack idea – because the chicken is cooked when it gets sauced, I like to dip my chips in the leftover sauce. Can’t let the goodness go to waste.
