With the new baby coming (any day now!), I find myself searching for ideas to get more fruit and plant-based foods in my diet quickly and easily. Goodness knows I will need quick snacks and meals to keep me going during the first few months of breastfeeding. Smoothies are one of my favorite solutions, and the newest smoothie in my lineup is a Dairy Free Tropical Smoothie.

I’ll tell you right now, I have a major sweet tooth. So this recipe is perfect for me. It is more like a dessert smoothie since it includes So Delicious Coconut Milk frozen dessert (aka dairy-free ice cream), but we all needs a sweet treat now and again. And I especially think nursing moms need a treat. Plus check out all of the healthy stuff it has in it too. Yum!
Dairy Free Tropical Smoothie
Ingredients:
2 ripe bananas
8 large strawberries
12 oz. pineapple, fresh preferred
½ cup coconut flakes, divided
1 cup So Delicious Coconut Milk frozen dessert in Vanilla
2 cup Silk Almond Milk
Serves 2-4
Directions:
Cut the fruit into bite size chunks for easy blending.
Add everything to the blender using half of the coconut flakes (optional, but wow it’s amazing), blend on high for 1 minute.
Serve with remaining coconut on top for garnish.
