Add More Fruits And Veggies To Your Diet With A Strawberry Banana & Veggie Smoothie

Like most people, I don’t eat enough fruits and vegetables. I like fruit and vegetables, but most days I tend to nosh on something else. In an effort to eat more good stuff, I started making myself a daily veggie smoothie. I used to make just a basic strawberry banana smoothie, but over time I have started adding veggies to my smoothies and now a Strawberry Banana and Veggie Smoothie is my go-to choice for lunch every day.

To kick off the new year, I partnered with Coca-Cola, the makers of Simply Juice, to share a healthy Strawberry Banana and Veggie Smoothie recipe.

My smoothie experiment started in the fall, and by Christmas it was time to replace my very old, very worn out blender. Now I am ready to face a new year with a healthy new lunch routine that includes a pile of fruits and veggies. A cup of vegetables and three cups of fruit to be exact – that’s a lot of goodness packed into lunch.

The CDC estimates that only 13.1% of American adults eat enough fruits and only 8.9% eat enough vegetables. Adding something as simple and tasty as a smoothie can help you get closer to the daily recommended two servings of fruit and three servings of vegetables. Not only is it great for your overall health, but filling up on fruits and veggies is better for your waistline too.

Some people enjoy yogurt or milk-based smoothies, but I get enough dairy in my diet already and prefer straight fruit and veggie smoothies. So I use Simply Juice orange juice as a base to created my Strawberry Banana and Veggie Smoothie. (And sometimes Simply Juice orange banana – yum!)

I love adding spinach to smoothies because you can’t taste it and green leafy veggies! Even my daughters will happily drink this veggie smoothie. Surprisingly, you really can’t taste the carrot either. So many great vitamins packed into this yummy strawberry banana and veggie smoothie!

Ingredients

  • 3/4 cup Simply Orange Juice
  • 1 banana
  • 1 small apple
  • 1 large carrot
  • 1 handful fresh spinach
  • 1 heaping scoop powdered peanut butter** (substitute creamy peanut butter)
  • 8 – 10 frozen strawberries

Directions

Layer in your blender the juice, solids, frozen strawberries and peanut butter. Then blend until smooth and enjoy.

PS – I puffy heart my new Blentec blender

** Powdered peanut butter is my favorite smoothie discovery. It is peanut butter without oil. Crushed peanuts, salt and sugar — that’s it. It is perfect for smoothies because it gives you the protein and the taste without the extra fat and calories from oil.

I get a bottle just about every time I stop by the grocery so that I can make smoothies for me and my family. I really like that this smoothie has veggies as well as fruit in it! I’m going to have to pick up some powdered peanut butter now! Thanks for sharing 🙂
