What’s better than bacon and pancakes? How about bacon INSIDE pancakes?! These Bacon Pancake Strips are easy to make and downright delicious, plus they are a fun way to turn breakfast into a finger food. And in my house, everyone loved this twist on breakfast for dinner.
Yes, I am sure these Bacon Pancake Strips would be great for breakfast, but everyone knows breakfast for dinner is a special treat. So I decided dinner was the best time to introduce my family to this creation, and I was right.
Bacon Pancake Strips
- 10-12 strips Wright® Brand Bacon
- 2 cups flour
- 1 1/2 tablespoons baking powder
- 1 1/2 tablespoons sugar
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 eggs
- 2 cups milk
- 2 tablespoons butter (melted)
Cook Wright Brand Bacon for 15-20 minutes in the oven at 400 degrees. Remove bacon from oven and place strips on a paper towel to remove excess oil.
While bacon is cooking, whisk together dry ingredients until well mixed. Then add wet ingredients and whisk until all lumps are removed.
Spray pan or griddle with cooking spray and pour pancake batter in a long oval shape.
Place cooked bacon strip on top of the pancake batter.
Drizzle additional pancake batter on top of strip of bacon.
When pancake is cooked on the first side, carefully flip the pancake with bacon to cook the other side.
When fully cooked, bacon will be inside of the pancake.
Serve with maple syrup for dipping.
