Cheddar Bacon Quiche Recipe

There is something about breakfast for dinner that makes my family run to the kitchen table. Don’t get me wrong they love breakfast in the morning too, but when I serve it for dinner it is a treat. (Little do my kids know the breakfast for dinner is just about the easiest dinner ever!) Feeling a little fancy, I decided to treat my crew to a Cheddar Bacon Quiche breakfast for dinner. (BTW if you haven’t made a quiche, it seems fancy but is totally easy!)

Cheddar Bacon Quiche Recipe
What’s not to love about a quiche? Bacon, eggs, cheese and pie crust! Sounds just as delicious to me in the mornings as it does for dinner, and my family agrees.

Quiche for Dinner

Cheddar Bacon Quiche

Ingredients

  • 4 eggs, beaten
  • 10 slices of Hormel Black Label Bacon, cooked crisp and crumbled
  • 1 refrigerated pie crust, softened as directed on box
  • 1 cup shredded Cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1 cup half-and-half
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Recipe for Quiche
Directions

Pre-heat oven to 350 degrees. Place pie crust in a 9-inch glass pie plate as directed on box.

In a medium bowl, scramble eggs with half-and-half, salt and pepper; set aside. Layer bacon and cheeses in a crust-lined pan. Pour egg mixture over top.

How to Make a Quiche
Bake 40 to 50 minutes or until knife inserted in center comes out clean.

Let stand 5 minutes. Cut into wedges and serve.

Egg and Bacon Quiche Recipe
This recipe makes one quiche, but it is just as easy to make two at a time. If you only have one pie dish (like me), you can mix up a double batch and keep half of the ingredients stored in the fridge until the first is done cooking. Why make two? Because a quiche makes for great leftovers.

Breakfast for dinner, and then quick leftovers for breakfast the next morning. It’s the perfect double family even on busy school mornings. Besides, pie crusts are often sold in two packs. You might as well use them up.

    I eat “breakfast for dinner” all the time. On days we’re feeling more virtuous, we skip the crust and go frittata-style, with lots of sauteed veggies thrown in.

    Great and easy recipe – I like to brush the inside bottom crust with DiJon Mustard and sprinkle smoked paprika on top

    Sounds perfect! Can I use something else rather than Half & Half, which I never seem to have on hand? TIA!

      It’s delicious! There are a number of things you can substitute for half and half. I haven’t tried them in this recipe, but if you Google half and half substitutions you will find lots of options. Frankly, quiche is pretty forgiving, you could probably get away with whole milk. Not a true substitution, but I think it would work here.
