Strawberry Lemonade Mimosa

Everyone loves to cool off with an ice-cold glass of lemonade. So when coming up with a brunch drink recipe I couldn’t resist the change to put a new spin on the classic favorite. Move over orange juice, there is a new mimosa for brunches — a Strawberry Lemonade Mimosa. And it might just be the perfect, girly cocktail for a summer brunch.

The Strawberry Lemonade Mimosa maybe all pink and girly, but I handed my husband a glass to sample and not only did he enjoy it he asked for his own glass. 

Strawberry Lemonade Mimosa Recipe

Strawberry Lemonade Mimosa

Made with fresh strawberries and lemons this summer cocktail has just the right amount of sweetness but is also waist-line friendly because the tangy lemonade is sweetened with Sweet ‘N Low. Plus all of the benefits of the fresh fruit, who can argue with that?

Ingredients

  • 1 1/2 cups of fresh squeezed lemon juice (8-10 lemons)
  • 1 pint of strawberries
  • 5 cups of water
  • 2 packets of Sweet ‘N Low
  • 1 bottle of pink Moscato champagne

Strawberry Lemonade Mimosa Ingredients
Directions

Squeeze 8-10 lemons, strain for seeds and large pulp and set aside.

Puree one pint of cleaned and hulled strawberries and strain for large chunks.

Combine lemon juice, purred strawberries, 5 cups of water and 20 packets of Sweet ‘N Low in a large pitcher. Stir until well mixed. Chill.

When you are ready to serve, fill champagne flutes half way with champagne. Fill the rest of the glass with strawberry lemonade.
