Easy Bruschetta Chicken

Some nights it feels like I answer the timeless question “Mom, what’s for dinner?” with the same meal over and over again. Coming up with new and interesting recipes that my whole family will eat can be a challenge. Sure we love our go-to favorites, but sometimes I have to mix it up — otherwise we would eat the same seven meals every week forever. Thanks to the Best Meals Happen At Home newsletter, I just added a new favorite dish to the rotation — Bruschetta Chicken.

Easy Bruschetta Chicken Dinner
This easy, and delicious Bruschetta Chicken was a huge it in our house. In fact, it was a clean plate meal, which means both kids gobbled it down without any reminders to keep eating. (If you knew my kids, you would know what a big deal this is!) Even my husband was impressed with how light and fresh the recipe was, so it truly was a well-rounded family recipe.

Bruschetta Chicken

  • 1 Tbsp. olive oil
  • 1 pound boneless chicken breasts, sliced
  • 1 clove garlic, chopped
  • 1 package Knorr Rice Sides – Creamy Chicken flavor
  • 2 large tomatoes, seeded and chopped (about 2 cups)
  • ½ cup shredded mozzarella cheese
  • 2 Tbsp. chopped fresh basil leaves

Heat oil in large nonstick skillet over medium-high heat and cook chicken, stirring frequently, until chicken is thoroughly cooked, adding garlic during the last 30 seconds of cook time. 

Prepare Knorr Rice Sides – Creamy Chicken flavor in same skillet according to package directions. 

Stir in chicken and tomatoes. Sprinkle with mozzarella and basil.

Serves 4-5. Prep time 10 minutes. Cook time 15 minutes.

    I have to admit, most of the time when I eat Knorr products, I eat them as is. I love the chicken and the broccoli flavors the best! This looks super fancy, but really easy to make!

    Im not sure why Ive never tried chicken brushetta but it looks easy to make this way. I use Knorrs a lot for sides during the week.
