McCormick recently challenged me to make its Taco Casserole recipe based on one of the top 10 most-searched dinner recipes in 2012 — ground beef. (You can find tons of dinner ideas and recipes on McCormick’s website.) Since tacos and ground beef are a weekly staple in our house, I was more than happy to experiment with a new version of our family favorites.

After one bite my daughter declared, “Mommy, you have to make this again!” High praise from a girl who (much like her mom) isn’t keen on changing up our menu plans.

The best part is that dinner was super simple and quick. I even made a little Instagram video of the basic steps – mix, boil, bake, serve. Check it out.

McCormick Taco Casserole Recipe

  • 1 package McCormick® Taco Seasoning Mix
  • 1 1/2 pounds ground beef
  • 1 can (16 ounces) pinto beans, drained and rinsed
  • 1 can (15 ounces) tomato sauce
  • 1 can (11 ounces) Mexican-style corn, drained
  • 2 cups shredded Cheddar cheese
  • 1 cups coarsely crushed tortilla chips

Preheat oven to 400°F. Brown meat in large skillet on medium-high heat. Drain fat.

Stir in Taco Seasoning Mix, beans, tomato sauce and corn. Bring to boil. Reduce heat to low; simmer 5 minutes. Spoon into 2-quart baking dish. Sprinkle with cheese and tortilla chips. (Note, I doubled the amount of cheese from the original recipe because my family thought it needed more cheese and chips.)

Taco Casserole Recipe Ingredients

Bake 5 to 10 minutes or until cheese is melted. Serve with assorted toppings, if desired.

  4. I clicked through to the recipes and saw quite a few interesting ones. Many of the cupcakes are adorable but I don’t have a knack for that. They never turn out like they are supposed to. As I continued to peruse the selection, I literally, out loud, by myself, said “Oh… My… God.” I spotted the Red Velvet Hot Chocolate. I LOVE Red Velvet but have never heard of it in hot chocolate!

  6. mccormick is made near me, and it’s my favorite brand of spices! I see a lot of halloween treats I’d like to try, but I can also see myself making that colored sugar for my upcoming wedding.
