Sometimes you just need a quick and easy meal. For those nights, Chef Boyardee has long been the old standby for families. It’s easy to open a can, heat and serve. But have you ever thought about adding something extra to a can of Ravioli? I’ll be honest, I had not. But when I came across this recipe for Italian Ravioli Skillet, I had to try it.
The best part is that with just a couple of additions, this meal is even tastier and just as easy. In fact, it is so easy my four-year-old did most of the work. Open cans (mom), dump in a saucepan (K) and stir (both). It really is that easy.
Here’s the full recipe:
- 2 cans (15 oz each) Chef Boyardee® Beef Ravioli
- 1 can (14.5 oz each) Diced Tomatoes, drained
- 1/4 teaspoon garlic powder
- 3/4 cup shredded mozzarella cheese
Combine cans of Beef Ravioli, drained tomatoes in saucepan and garlic powder; cook 3 to 5 minutes or until hot, stirring occasionally. Sprinkle with cheese, cover and cook 1 to 2 minutes or until cheese melts. Plate, sprinkle additional cheese and serve.
Total time, 10 minutes, tops.
If your family likes Chef Boyardee® Beef Ravioli, you’ll love these simple additions for a bit more flavor. Plus it’s a great way to sneak in more fruit (tomatoes) and dairy (cheese).
The original recipe, found on Chef Boyardee’s recipe page, calls for shredded zucchini too (which would be a great veggie addition), but since that is one of the few veggies my daughter doesn’t eat we skipped it. Last week I shared my excitement in being featured in the Chef Boyardee Little Chefs ebook, and I briefly mentioned a live cook-a-long to celebrate the book release. Well, guess what – I will be chatting LIVE during the event. I am both excited and petrified because I was one of the authors selected to represent the chapter by chatting via Skype about what the topic Fun with Flavors means in our house. That chat will be streamed live on the Internet for the whole world (including you) to see. Like I said, excited and petrified!
All the fun goes down tomorrow, November 8 at 2 pm EST, and I would love for you to check it out and root me on! (Please send positive vibes my way!)
