BBQ Chicken Cups Appetizer Recipe

Crescent dough is one of my favorite bases for an appetizer because it’s easy to work with, and you can turn your favorite shredded chicken recipe into delicious, hand-held appetizers. In this case, I’ve taken BBQ chicken and turned it into an easy and tasty appetizer.

Shredded BBQ chicken doesn’t get easier than using an electric pressure cooker to make it. You just pour in the water and Kraft® Original Barbecue Sauce, add the chicken, seal and cook. The chicken comes out so moist it shreds with just a fork.

If you are looking for a quick dinner idea, you can increase the amount BBQ chicken, skip the steps to create the cups and serve the shredded chicken with a side of beans and corn. But this full recipe is perfect for making a BBQ Chicken Cups appetizer that is perfect to snack on while cheering on your favorite football team.

BBQ Chicken Cups Recipe

While BBQ chicken cups are always a crowd-pleaser, they are also easy to make for a small gathering. And they are both adult and kid-friendly, so you can make these for the whole family to enjoy.

As an added bonus, they reheat beautifully in the toaster oven. My kids enjoy BBQ chicken cups as a tasty after-school snack.

BBQ Chicken Cups

Makes 12 servings, 1 individual cups each

Tip: if you are short on time, you can substitute rotisserie chicken from Walmart and skip cooking your own.

Ingredients:

  • 2 medium chicken breasts
  • 1 (18 ounces) bottle KRAFT Original Barbecue Sauce
  • ½ cup water
  • 1 tube of crescent roll dough (8 oz)
  • ½ cup KRAFT Mild Cheddar Shredded Cheese
  • Cooking spray

Directions:

1. Place chicken breasts, 1 cup BBQ sauce and water in the electric pressure cooker. Place lid on lock, turn the valve to sealing and cook for 15 minutes.

2. Preheat oven to 375°F. Spray a 12-count, standard-size muffin pan with cooking spray;
set aside.

3. Roll out half of the crescent roll dough on a cutting board. You should have 4 triangles.
Pinch the edges together and gently stretch the dough to make one large square. Cut into 6
equal squares. Repeat with the remaining dough.

4. Press the dough squares into the muffin pan. Form the dough into little cups.

5. When chicken is cooked, natural release for 10 minutes, and then use the quick release.

6. Remove chicken from the electric pressure cooker and shred with a fork on a cutting board.
Toss with the remaining BBQ sauce.

7. Put 2 tablespoons of chicken into each cup. Sprinkle ¼ cup of the shredded cheese
evenly on top of each cup.

8. Bake for 10 minutes, or until crescent dough is golden brown. Remove from oven and
gently lift the edges of the cups to remove from the muffin pan.

9. Sprinkle the remaining ¼ cup of cheese on top of each cup while still warm.
