Red, White And Blue Ice Pops Recipe

Ingredients

  • 1 cup fresh blueberries
  • 1/2 cup coconut water
  • 1 1/2 cup fresh watermelon chunks
  • 1 tablespoon lime juice
  • Ice pop mold

Instructions

  1. Place the blueberries in a blender and puree. Add a splash of coconut water to thin the blueberry puree. Then carefully pour the puree into the mold filling approximately 1/3 of the mold.
  2. Freeze 2-4 hours.
  3. Pour coconut water on top of the frozen blueberry. Be sure to use cold coconut water so as to not thaw the blueberries.
  4. Return to freezer and freeze for 2-4 hours.
  5. Blend fresh watermelon chunks in the blender with the lime juice. (Again be sure watermelon and lime juice are cold so they don't thaw the coconut water.) Fill the rest of the mold with the watermelon puree.
  6. Return to freezer and freeze for 2-4 hours.
  7. Serve and enjoy these Red, White And Blue Ice Pops for the 4th of July and all summer long.
