We’ve enjoyed months of lazy mornings this summer, but next week it is back to reality and back to school! I don’t know about you, but I dread the early and rushed mornings. So much to do, so little time. And one of the most important morning chores is making sure my kids get a good breakfast to fuel them through their day.
Three rules for school morning breakfasts:
- My girls must love it (or they won’t eat it)
- It must be nutritious
- It must be quick and easy
I’ve accomplished it all with a Berry-licious Rice Krispies® Parfait.

Ingredients
- 3/4 cup Rice Krispies
- 6 oz Greek yogurt*
- 4-5 small strawberries
*You could also use traditional yogurt, but my girls love coconut Greek yogurt, and I loved the added protein.
Directions
Layer Rice Krispies, yogurt and strawberries in a bowl and serve immediately.
See, I told you it was easy. So easy you can make it in less than 5 minutes, and that includes the time it takes to get out all of your ingredients. You could even assign kids to make their own breakfast (gasp!).
So what does my tast tester (and sous chef) think of breakfast? I think the smile says it all.
